Because it was on sale and I had a coupon

Do you ever shop like this:  it was on sale and I had a coupon.

Because corn tortillas were on sale last week...and I had a coupon...I bought the package of 80. 
Eighty corn tortillas!! 
But really, how could I not, when the package of 80 was $2.99 (and don't forget that I had a coupon), and the package of 40 was something like $2.69. 

So I've been cooking new things...with corn tortillas!! 
I quizzed a few Cooking Friends for their enchilada recipes. 
Finally, I decided to make The Pioneer Woman's White Chicken Enchiladas.  Super yummy.  Not good for you!  But worth it. Give them a try some time, if you're in the mood for a non-traditional chicken enchilada.

Then I made an attempt at the humble Tostada.  Note: to cook corn tortillas to a nice wonderful crispyness the oil must be hot, but not too hot.  Right!  The mystery evaded me, too.

Last night, spur of the moment, I went to the The Pioneer Woman again for her beef enchiladas (AKA Simple, Perfect Enchiladas).

I finally managed to get a few pictures in the process.  
Messy!
I tell you what, those cooking bloggers who post pictures of every step in the process either have an in-house photographer or four hands.

Of course, I forgot to get a picture once they were out of the oven.  But they were yummy!
And I finally put two dozen of the original 80 in the freezer.  This week I'm going to attempt Migas, if I can remember to pick up a dozen eggs, half-and-half and a pound of cheese. 

Maybe I should have considered a gym membership in the "cost-savings" of 80 corn torillas, even if they were on sale and I had a coupon.

I am a "sometimes" couponer too. Can't quite decide if they are worth it yet... so I kinda do it halfway:)
Those enchiladas look amazing. I think you did pretty well with your step by step photos. Delicious!Those fancy food bloggers MUST have a crazy process in place...

As I perused the recipe, I couldn't help but be turned off by the fact that she started with enchilada sauce to make the enchilada sauce. I'm waaay too lazy for that business.
